Description
Cape Barren Rare Bird McLaren Vale Shiraz Original vines were selected from Spain to select vines especially suited to the very cool climate of Charleston. And the result is a complex blend of 8 different varieties but all perfect to be grown in the Adelaide Hills Vineyards. The grapes were harvested by hand, crushed. Where cultured yeast is added and fermentation is carried out for 8 days. Pumping occurs twice daily and the temperature is kept between 23-25 degrees Celsius. The wine has been aged in 100% new French oak barrels and rests in the wine for another 7 months.
